Leftover lunch - penne with pear and mushroom cream sauce

This will be another quick and dirty description of what I whipped up last night. We're sitting around the Bryght office having the leftovers for lunch.

I've still got lots of onions to use up, so they've been the base of a lot of dishes. Ditto with pears. Ditto with sherry :P

Slice 3 small onions thinly and saute on low heat in 2 Tablespoons of butter until they start to get soft. Add sliced mushrooms and turn heat up, stirring often. When mushrooms are tender, add cubed pear. Sprinkle in a tablespoon of flour and stir in. Then add 1/4 cup of sherry and mix in as the flour thickens the mixture. Keep on high heat, then add a cup of milk and 1/3 cup of cream cheese, stirring to mix everything together. Add more milk to adjust thickness as needed. Spice with salt and pepper to taste, dollops of horseradish to desired spicyness, and powdered ginger and a bit of nutmeg to finish.

Once everything is blended and heated through, add cooked penne and mix to coat. I used whole wheat penne which stand up to cream sauces really nice (and taste like cardboard without heavy sauces :P). 

The pears and gently sauted onions added quite a lot of sweetness. Rather than horseradish, I could have made this a curry cream sauce. I think I'd do that next time.

Last week I made a mushroom soup out of similar ingredients (that is, onions, sherry, mushrooms, and cheese). I'm enjoying a new deep sauce pan that I got.
