This is the only time I've prepared a a roast pig. We went for a weekend trip to New Brunswick while I was living in Ottawa, and arranged to get a pig (thanks, Megan!).
A pig roaster was procured, lent to us by the Minister of Finance of New Brunswick, no less.
The big guy at my right is Louis. He was off pork for a while after helping me "carve" this sucker. I freely admit that I didn't exactly know what I was doing WRT carving, and it was a messy job. Still ended up being delicious...
