I have no idea what is in it (other than pork), but I definitely need to try it some time. I took this picture on Granville Island, so maybe I will pick up some of it and do a "head cheese tasting" event. This also reminded me to go add this to All Consuming, where you can track what you've eaten.
I actually am quite a fan of head cheese. I like to eat it on a nice piece of buttered rye bread, perhaps with a bit of tangy mustard as well.
As a "main meal", you can serve "salzkartoffeln" -- boiled salted potatoes -- with a few slices of head cheese per person.
