What do you make when you are short on flour and eggs? Jonnycakes! These turned out to be really easy to make and went well with stew, and also drizzled with honey.
Basic hot cornmeal-based porridge recipe. I used soy milk instead of condensed milk, so you'll want to add a bunch of brown sugar or honey to bring the sweetness out.
I've been cooking lots with cornmeal, so I'm always looking for different recipes. I did a half recipe, but kept the whole egg. Also, soy milk instead of milk. The whole folding the egg whites in is a bit of overkill, too.
I wanted to experiment with oat flour, and found this Australian recipe. Didn't have a small cake tin, so I made it in a cast iron pan.
