About as good as it gets! This is the version of French Onion Soup that people seek when they go to restaurants. I have been making it for 30 years and it never fails to please. It makes an exquisite presentation, too
Making potato pancakes today resulted from my search of local produce:
Potatoes from the Fraser Valley, Onions from BC, Eggs from Bowen Island, and Apples from our neighbour's winter supply.
A sweet-sour turkey dish, with raisins and onions. Serve for example with beans rolled in bacon, steamed pears with berries, and croquettes. Instead of turkey, you can also use chicken breast or porc.
I had a huge pile of onions starting to go bad, and, looking for a recipe requiring lots of onions, I found this "Zwiebelkuchen", available everywhere in South Germany and in the Southwest of France where wine is made. It is best eaten with new wine, that is still sweet, but also a bit sour.
