Hack your Collards
As a born and bred Southern girl, nothing makes me happier than finally being able to buy collards in Vancouver. If you want to switch it up a bit, you might also try my favorite collard greens mod:
Instead of using bacon fat, try using smoked turkey or a smoked hamhock if you can get it. The smoke adds an amazing flavour, and because you're using turkey, it's a bit healthier.
I also like to just saute up some onions, garlic, pinch of brown sugar and sundried tomatoes in a pan, and dump this into some collards that I've sauteed and braised in chicken stock (about 10 minutes in the stock). I cook for an additional 10-15 minutes on low-medium heat to let the flavours blend. Yum, yum, yum.
