A very simple, quick recipe created to use up the apples in my fridge from the fall.

The main rule of thumb is about 2 to 2 1/2 eggs per person, plus about as many vegetables as eggs.
I've been cooking lots with cornmeal, so I'm always looking for different recipes. I did a half recipe, but kept the whole egg. Also, soy milk instead of milk. The whole folding the egg whites in is a bit of overkill, too.
