Making potato pancakes today resulted from my search of local produce:
Potatoes from the Fraser Valley, Onions from BC, Eggs from Bowen Island, and Apples from our neighbour's winter supply.
Peel and core the apples and cut into chunks. Simmer with a bit of water until soft. Mash apples. Set aside and let cool.
Peel and finely grate potatoes and onion. Stir in egg and salt.
Heat a small amount of oil in cast iron pan. With a large spoon, scoop three to four small heaps of the potato mixture onto the pan. Fry until golden brown, flip, and fry other side.
Eat with apple sauce.
