Baked Indian Eggplant with Cilantro and Garlic

Description

I often make eggplant slices baked in the oven, and when I saw these "baby" eggplants, I thought they would be good whole. And they are! Here's a page with a bunch of different kinds of eggplants pictured: http://www.evergreenseeds.com/oreg.html

Ingredients

  • 4 c indian eggplant
  • 1⁄2 c cilantro, chopped
  • 2 clv garlic, minced
  • 1 1⁄2 tbsp olive oil
  • salt and pepper

Instructions

Prepare the eggplants by removing the top and cutting them in half lengthwise. Put them in a large oven proof baking dish. Drizzle with olive oil and mix in the cilantro and garlic, plus salt and pepper to taste. Once coated in oil and spices, arrange the eggplants in the dish so they are cut side up.

Place under broiler until tops begin to brown (about 10 - 15 minutes). Then cook for about 20 minutes longer at 350° or until done.
