This is called "Opa's" because my dad has made this (or something similar to it) for a long time. The three basic ingredients always remain the same: sauted squid, tomatoes, and some sort of meat. Opa usually uses some nice thick cut bacon or some German speck.
Chop the chorizo sausages and saute, removing when browned. Cut the squid tubes open and then into 1/2 inch wide strips, scoring them with your knife. Add garlic and hot pepper to the pan that had the chorizo, add some olive oil and put on high heat. Cook the squid tube strips in batches, adding olive oil as needed. Keep the squid warm underneath a broiler brushed with some olive oil and pepper.
Roughly chop the onion and saute in olive oil. Add the cooked chorizo back in and the canned tomatoes. Using a spoon, cut the tomatoes into smaller chunks. Add in the cooked squid tubes and basil and put on simmer. Cook until flavours have melded nicely -- adjust with some red wine, salt and pepper, or additional hot peppers as desired. Just before serving, stir in the fresh chopped parsley.
Add some lemon zest directly to the dish and/or have lemon wedges to squeeze over top. Good over rice or noodles.
