Description

Another recipe I found while looking at how to use up a bunch of onions.

Cook the pasta as per directions – shells, rotini, farfalle, or other "chunky" pasta that takes a sauce coating nicely.

While the pasta is cooking, put the olive oil in a pan and cook the onions in it with the salt and pepper until caramelized. This will take 10 - 20 minutes depending on the size of your pan. Add the white wine and cook on low for another 10 - 15 minutes (or until the pasta is done).

Drain the pasta and reserve a cup of the pasta water. Put the pasta in a bowl and add the onions, using the pasta water to clean out the pan. Add the blue cheese and toss to melt it and coat the pasta, adding more pasta water if you want it saucier.
