I can't find the recipe that I originally made a couple of Christmas' ago, so I ended up making this from scratch. Most people aren't used to having Brussel sprouts shredded -- they're good.
Cut the bacon into pieces and saute in a large saucepan until it starts to crisp. Cut off the hard stalk of each brussel sprout and chop roughly, or uses a mandolin to slice.
Add the shredded brussel sprouts to the saucepan with the bacon, and pour in the olive oil. Keep on medium high heat and stir. Add in the lemon zest (from approx. 2 lemons) and the lemon juice, and pepper to taste.
Saute until the brussel sprouts are just tender -- the sprouts should be bright greeen. Add a little water if they begin to stick, which will help steam the sprouts.
