Not at all like "mashed" potatoes. Tender white or red potatoes that are boiled, then crushed in a baking pan and finished in the oven.
The potatoes should be red or white new potatoes. Boil them until just before tender, then turn them out onto a large baking sheet. Crush them using the back of a large spoon. Sprinkle on the olive oil and spices, then place in a 350°F oven and bake until tender. Place under a broiler for 5 minutes if you want them to start to crisp.
You can easily vary the flavourings. Fresh herbs (rosemary, basil) are especially tasty.
