Vegan pancakes!

Ingredients

Instructions

  1. Combine all the dry ingredients. You can use up to half wheat flour, 1/3 is recommended.
  2. Combine the wet ingredients.
  3. Mash the banana inside it's skin.
  4. Combine everything and mix. Do not overmix, some lumps should remain.
  5. Cook on a pan greased with some non-hydrogenated margarine, such as Earth Balance.

Notes

Serve with some fancy jam and good maple syrup.

Excellent!

When I bake pancakes for my son, I usually only use flour, soy milk and vanilla sugar. I'll definitely give this a try.
