Double Baked Dorito Nachos

Description

A favourite at any party I throw. These nachos are mouth watering and full of artery clogging goodness.

  • Preheat oven to around 350F
  • Brown ground beef in frying pan on medium heat
  • Dice the yellow onion. I usually use about half a medium sized onion, but you can use more if you really like onion.
  • While the beef is browning, cut the peppers into fine strips. The pieces should be small enough so you can get at least one whole piece on each nacho chip
  • Spread about 2/3 of the bag of nachos onto a pizza sheet or similar sized pan -- casserole dishes don't work too well
  • Distribute about 2/3 of the peppers, jalapenos, and olives over the first layer of nachos
  • When the beef is browned, reduce heat, and drain fat. If you're adventurous, leave a bit of fat in since it will definitely enhance the flavour -- just don't leave too much otherwise the nachos will become soggy.
  • Add contents of taco seasoning to ground beef. Following instructions on the package (usually involves adding a cup of water and letting simmer for 10 minutes or so).
  • Grate the cheese, and spread about 2/3 of it over the nachos and vegetables.
  • When the ground beef is ready, sprinkle 2/3 of it over the cheese for the first layer
  • At this point, the nachos should be looking pretty good. Put the first layer into the over for about five minutes. You want to pull them out when the cheese is nearly melted, but not entirely. Make sure the oven isn't too hot, otherwise the powdery cheese on the doritos will blacken and ruin the presentation.
  • Once the first layer is out of the over, spread the remaining 1/3 of the doritos onto the nachos
  • Add the rest of the peppers, olives, jalapenos. Sprinkle cheese on. Add the remainder of the beef.
  • Cook the nachos until the cheese on the top layer is completely melted. At this point, the cheese in the first layer should be completely melted as well.
  • There you go. These are usually a hit. Serve with beer.

Notes

I've been honing this recipe for years, and based on the pleading I get from my friends to make it all the time, I think it's getting close to perfection.
