Description

A traditional basic Canadian homestyle soup. A variation of the standard beef & barley.

Ingredients

Instructions

Brown hamburger & onion.

Place in a large stock pot & add 8 cups water

Add the rest of the ingredients & simmer on medium for 4 hours.

Adjust salt and pepper to taste.

Notes

You can substitute macaroni or a can of baked beans for the barley.

More water

I pretty much made this according to the recipe, except I substituted broccoli for the zucchini. I also deglazed the browned hamburger with a little sherry, and added a bottle of beer: anything other than water adds a little more body to the soup.

I would also add more liquid. As you can see from the pictures, the pot was basically full, so I need a bigger one next time. But, it was almost stew-like, and Kate really is a fan of the soup broth. Also, we tried it the first time after 2 hours: the soup really needs to simmer for 4 hours to develop it's full flavour.

Lastly, I really like a little bit of tang in my soup, so I added a splash of white vinegar.
