A meaty vegetable main dish.
Cut the squash in half and remove the seeds, etc. Put the squash halves cut side down on a baking dish. Cover the squash and put in a pre-heated 350° oven. Cook for 30 minutes and take out of the oven and uncover.
Cook the sausage over high heat until browned. Drain the sausage and set aside, wiping any remaining fat out of the pan.
Use cooking spray on the pan and put on high. Add the onions and mushrooms and saute for about 5 minutes. Add the peppers and garlic and saute for another minute. Put the sausage back in and add the bread cubes, spinach, and pepper and cook for another 3 minutes while stirring.
Put about 1/2 a cup of the mixture into each squash and top with the Parmesan. Put back in the overn and bake for 45 minutes or until the squash is done.
Ground beef or other types of sausage can be used, and you can vary the cheese used as well.
