Description

Pasta dish with simple ingredients that tastes fabulous.

Shred the shallots and fry them in a medium saucepan in olive oil. Quarter the cherry tomatoes and add them to the saucepan, as well as 350ml of water. Let simmer on a medium to high heat for 30 minutes and stir regularly until all the tomatoes have softened up. Add more water if needed.

Boil a pot of water, add some salt and butter and drop in the penne. Boil for as long as needed.

Stir in a tablespoon of curry paste into the sauce and add a dash of ketchup or tomato paste to taste. Sprinkle on the spices. At this point, the sauce should be smooth, but not too thick. Let it simmer some more if it's too chunky.

Heat some oil in a frying pan and fry the shrimp on high heat. Splash on a nice helping of teriyaki sauce and let it soak in a bit. Turn them over as needed.

Now add the Boursin cheese to the sauce on medium heat and stirring until it has dissolved. Slice the Gouda into small cubes and add it as well. Let it bubble for a minute or two and stir until creamy.

Drain the penne and serve with the shrimp and sauce and a leaf of lettuce for color.

Notes

You can vary the different ingredients to taste, but if you do it right you should get a very nice combination of flavours between the sauce and juicy shrimp. The fresh cherry tomatoes are worth the time and effort too.
